Beef with Yorkshire Pudding

Author: Family of Heritage Cookbook Creator Amy V.S.
Recipe origin: England
The story behind the recipe:
“With just a few ingredients and the right techniques, anyone can whip up this ultimate English comfort food.”
Ingredients:
- Yield: 12
- 1 8 lb. standing rib roast
- 4 eggs
- 2 C. flour
- 2 C. milk
- 1 tsp. salt
How to make it:
Place roast fat side up in shallow roasting pan. Season with salt and pepper. Insert meat thermometer at 325 degrees until it registers 160 degrees (about 4 hours). Remove roast from pan and keep warm. Reserve 1/4 C. meat drippings. Increase oven temperature to 400 degrees. Combine eggs, flour, milk and salt. Beat 1 1/2 minutes with electric mixer. Pour half of drippings into each of 2 9X9 pans. Pour 1/2 batter into each pan. Bake at 400 degrees fro 30 minutes. Serve as accompaniment to roast beef. Beef with Yorkshire pudding is a classic English dish. No “proper” English family cookbook would be complete without this recipe.
