The story behind the recipe:

This was my great grandmother's lemon pie recipe. It's the oldest recipe in our family. I would make this pie on a special occasion like during Christmas holidays.

Ingredients:

  • 6 eggs
  • 1/2 cup lemon juice
  • lemon rind
  • 1 cup sugar
  • 4 tablespoons water
  • 1 pie crust

How to make it:

Separate 6 eggs.

Put yolks into a double boiler, and the whites into a mixer.

Add into double boiler 1/2 cup fresh lemon juice, grated lemon rind, 1/2 cup sugar, and 4 tablespoons water. Mix well (whisk) then stir constantly as you cook it until thickened. ! It takes a while ;-)

Allow this to cool. Once cool, stir to blend.

Beat egg whites with 1/2 cup sugar to make a firm meringue. Gently fold 1/2 of the meringue into the yolk - lemon mixture. Pour into pie shell.

Top with remainder of the meringue to form peaks.

Brown 'lightly' under boiler.  Watch carefully!
